Apple and soy yogurt cake
Ingredients
- 2 apples
- 1 tablespoon lactose-free margarine
- 80 grams brown sugar + 1 tsp
- 2 tablespoons of water
- 200 grams of natural soy yogurt
- 30 milliliters of oil (rapeseed or sunflower)
- 1 tablespoon lemon juice
- 200 grams of wheat flour
- ½ sachet of baking powder
How to make?
Wash and peel the apples, cut into cubes and cook them in a pan with a tablespoon of margarine. Add a tablespoon of brown sugar and another of water, let it caramelize for 5 to 10 minutes.
In a salad bowl, combine soy yogurt, brown sugar, oil, lemon juice and a tablespoon of water. Then gradually add flour and baking powder.
Add apples to the dough, mix well. Grease a mold with margarine and pour the mixture. Sprinkle with brown sugar. Bake at 180°C for 30 minutes.
Spaghetti bolognese with soy protein
Ingredients
- 200 grams of spaghetti (with or without gluten)
- 50 grams of textured soy protein (small pieces)
- 250 milliliters of water
- 50 milliliters of red wine
- 1 onion
- 1 carrot
- 200 milliliters of tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon brown sugar
- Salt and pepper
How to make?
Rehydrate the soy protein in 250 ml of boiling water for 5 minutes on the heat and then another 15 minutes off the heat.
Then cut the onion and carrots, fry in olive oil for a couple of minutes (it should brown slightly). Salt and pepper. You can also pre-steam the carrots.
Drain the soy protein, add it to the pan, add the red wine and let the liquid evaporate completely. Then cover with tomato sauce and add brown sugar. Cook for a few more minutes. Season with seasoning (salt, pepper) if needed.
Cook the spaghetti (time varies, but prefer to cook al dente). Arrange the spaghetti on a plate and add the sauce with the soy protein.
Vegetable Curry
Ingredients
- 300 grams of zucchini
- 200 grams of carrots
- 350 grams of potato
- 150 grams of spinach (leaf)
- 1 onion
- 150 milliliters of water
- 200 milliliters of coconut cream
- 1 teaspoon yellow curry
- 1 teaspoon coriander ground coffee
- 2 soup spoons of olive oil
- Salt and pepper
How to make?
Peel the zucchini, carrot and potato, rinse and cut into regular squares. Steam for 25 to 30 minutes.
Chop the onion and sauté it with the olive oil, add the curry powder, coriander powder, salt and pepper and the spinach leaves. Add water, let reduce.
Pour coconut cream, it should warm up without boiling. Then add the previously steamed vegetables, cook another 2-3 minutes and serve with rice, for example.
