Cold days need special recipes that serve as a comfort, warming us and generating good memories through a good time and a captivating flavor.

With that in mind, I’ve put together 4 special recipes for winter days!

Leek soup

Ingredients

  • 2 spoons of olive oil
  • 2 spoons of butter
  • 3 sliced onions
  • 2 chopped leek stalks
  • 2 vegetable broth cubes
  • 1 liter of water
  • 1 spoon of wheat flour
  • 1 small box of cream
  • Salt and nutmeg as desired
  • Grated Parmesan cheese

Preparation time

Start by heating the oil with the butter over low heat, then add the onion and leek to sauté for 3 minutes.

Add the vegetable broth along with the water and cook for 5 minutes.

Afterwards, add the flour dissolved in the cream, then add the nutmeg and salt to taste.  

Cook until slightly thickened. Serve immediately.

Pea and bacon broth

Ingredients

  • 2 cups of dried peas
  • 7 cups of water
  • 1 bay leaf
  • 3 spoons of olive oil
  • 2 cups bacon cut into small cubes
  • 1 finely chopped onion
  • 1 clove of minced garlic
  • 1 grated carrot
  • ½ cup chopped green chilli
  • Salt and nutmeg as desired

Preparation time

Start by placing the dry peas in a bowl, then cover with water and leave to soak for 6 hours.

After this time, drain and place in the pressure cooker along with the sauce water, add the bay leaves, once the pressure has started, cook for 25 minutes over low heat.

Afterwards, turn off the heat and wait for it to cool.

Then process 1/3 of the peas in the blender until a homogeneous mixture is obtained. Reserve.

Afterwards, place a frying pan over medium heat and brown the bacon in the olive oil.

Add the onion and garlic, fry until golden.

Add the peas that were beaten and mix by hand, add the grated carrot, grated nutmeg and green chilli, cook until it boils.

Now just serve!

Fondue made with traditional cheese bread

Ingredients

  • 2 unpeeled potatoes, cut into 3cm cubes
  • 1 pct of cheese bread (500g)
  • Ingredients for fondue
  • 1 pct of cheese flavored soup powder
  • 3 cups of milk
  • ¼ cup of dry white wine
  • Nutmeg as desired
  • ½ cup of cottage cheese
  • 200g grated mozzarella cheese
  • 1 unpeeled garlic clove

Preparation time

Start by cooking the potatoes in salted water for 8 minutes.

Afterwards, drain and place on a platter, add the bread to another platter and place both in the oven for 30 minutes, or until golden.

Meanwhile, dissolve the cheese soup powder in the milk, place over low heat and stir constantly until thickened.

Add the wine, cottage cheese, nutmeg and grated mozzarella, return the pan to the heat.

Stir until the cheese completely melts. Pass the garlic in the réchaud pan and add the hot cream cheese. Keep the heat on the chafing dish lit to keep the cream hot.

Serve the cream with the cheese bread and potatoes.

Onion cream

Cream ingredients

  • 2 spoons of butter
  • 4 spoons of olive oil
  • 4 onions cut into cubes
  • 2 spoons of wheat flour
  • 1.5 liters of water
  • 2 cubes of meat broth
  • 1 bay leaf
  • Salt and black pepper as desired

Croutons

  • 5 slices of crustless bread, cut into cubes
  • 2 spoons of oregano
  • 2 spoons of olive oil

Preparation time

Start by melting the butter in the oil heated over low heat, then sauté the onion for 20 minutes, stirring once and again until golden.

Add the water, bay leaves and meat broth until it boils and thickens.

Season with pepper and salt to taste and let cook for 15 minutes.

For the croutons, place the bread in a pan, sprinkle the oregano and drizzle with olive oil.

Place in the preheated oven at medium temperature for 15 minutes.

Serve the soup sprinkled with croutons.
