Strawberry mousse
Ingredients
- 250g of strawberries
- 4 egg whites
- 100g of sugar
- 2 sheets of neutral gelatin
How to make?
To start, we put half a glass of water in a pan and add the gelatine leaves to hydrate them. We let it soak for half an hour.
After that time, we add the sugar and stir. We heat everything over medium heat. When it starts to boil, let it cook for about 5 minutes, stirring frequently. After this time, syrup will form. Remove from heat and let cool.
Then we put the whites in a wide container and beat them with some sticks. When they are at the point of snow, add the already cold syrup, to prevent the egg from cooking, little by little and without stopping beating. We reserve this meringue for later.
Once this is done, place the strawberries in a mixing bowl and crush them completely. When they are liquid, we filter them to remove impurities, add them to the meringue and mix everything until the mousse is homogeneous.
We let it rest for a few minutes and we will have our strawberry mousse ready.
Lemon pie
Ingredients
- 200g of marie biscuits
- 1 sachet of lemon gelatin
- 100g of butter
- 500ml whipping cream
- 250g cream cheese
- 150g of sugar
- 150ml of milk
- 150g lemon or apricot jam
- lemon zest
How to make?
In a tall container we place the cookies and crush them with an electric mixer. Then add butter at room temperature, and stir with a fork or spoon, until you have a homogeneous mixture.
We take the mixture into a removable cake mold, in which we previously put parchment paper. Then we spread it out with the help of a glass or spoon and compact it well over the bottom of the mold itself.
In a bowl we put the cream, the cream cheese, the milk, the sugar and the lemon zest. Then, with a spoon, we mix these ingredients until we get a homogeneous mass. We booked.
Now let's prepare the gelatin. In a pan, pour 250ml of water and bring to a boil. When it boils, we remove the casserole from the heat and wait a minute. Then we pour in the lemon gelatin powder and mix well.
Once the gelatine has been prepared, we pour it into the bowl that we had previously prepared, and we mix the contents again until we obtain a new homogeneous mass.
We put the mixture obtained in the previous step on the base of the lemon pie. We put this mixture on the biscuit base that we had in the cake pan. We put the mold in the refrigerator, and wait for about 3 hours, until the cake solidifies.
After that time, we take the mold out of the fridge and with a spoon we add the jam, in such a way that it is evenly spread over the entire pie. Is ready!

Ingredients
- 100g of biscuits
- 50g of butter
- 500 ml of cream
- 250g cream cheese
- 150g icing sugar
- Strawberry jam (or whatever you like best)
- Raspberries or strawberries to decorate
How to make?
In a beater glass we place the biscuits cut into small pieces. With the help of the mixer we crush them well. Add the butter and mix until you get a kind of wet sand.
We put this mixture in the bottom of a glass, where we will serve our dessert glasses. We spread it over its entire surface, until it becomes compact. We reserve the glasses in the freezer for about 10 minutes.
Then we put the sour cream for whipping and sugar in a bowl. With the help of some electric sticks, we beat for about 3 minutes.
Then we add the cream cheese and beat again for about 5 more minutes, until all the ingredients are integrated.
We remove the cups from the freezer and, on top of the biscuit base, add several tablespoons of the mixture that we have just prepared. We fill each dessert glass well and reserve it in the fridge until it is served.
When serving, add strawberry jam or whatever flavor you like best and decorate with blueberries, strawberries, raspberries… your choice.
